Daikon was a great sub. Also used red peppers. Any hardy vegetables would work.
I think mini ribs will work better but it's all good if you can't find those. I made it with regular ribs and it turned out just fine. CC liked the tenderloin pieces, but meh they were dry to me...
Used korean jjajang noodles. Any fresh noodles would be fine. Simply adjust braising/stewing time. This time around it took approx 2x as long as recommended in the video.
