Round 2 of Chef John's Birria!!!!!

I swear I was this close to punching him. One more time I hear him utter those words, I will lose it. Who the hell throws away liquid gold?!!?!? The cost of the raw materials alone is worth saving / repurposing the leftover Birria... not to mention the hours I worked over the hot stove? Jeez.

Anyway I took the leftover Birria stew, made a consommé with vegetables (classic sofrito ratio) like Chef John suggested. We toyed with the idea of making tacos like he suggested but only had 2 pieces of mini beef pieces left (lol). Also thought about a taco salad, but the weather is getting colder and salads are simply so unappealing when it's cold outside! Finally settled on ramen and almost at the same time uttered "let's add an egg to it". Lol this shared consciousness is incredible sometimes!

Notes
1. Sieved the broth before serving. 100% needed. I had cooked the vegetables in the soup for 2-3h extra, so the onions disintegrated and it was quite a mushy broth pre-sieving.
2. Added cilantro, raw onions/shallots, jalapeños, some mushrooms, and an egg as toppings.
3. Served a fried tempeh on the side! (Yum...)
