Chicken Adobo #3

Same recipe, but this time with chopped up chickens (instead of thighs) and finally found coconut vinegar! Chopped bone in chicken made it feel more 'authentic'. The vinegar gave the dish a less sharp vinegary taste which was great. Made it taste quite different, actually. Threw in 2 fresh shiitakes, because I had some sitting around, and they worked well. CC said "it's a sauce carrier." 

Truly feels his tastebuds are leveling up!! Exciting.

Might make it again tomorrow lol. However, like I always say... "Chicken Adobo is a dish you don't crave until you are eating it..." So we'll see.
