Amanda taste cannot make a bad dish! Love her youtube videos so much. It wasn't clear in the video but 1:1 ratio shaoxing to vinegar worked well. I used 100mls in total this time for 2 servings, but I think that can be upped to 150mls of liquid total. It needed more vinegar kick. Make sure to salt the shaoxing-vinegar liquid. 

Lol, fake version of kai shui with a clear and very salted chicken stock :) Good though! Would use napa next time as this vegetable was a little chewy...
