Another one for the journal: Taiwanese 3-cup Chicken

Use more basil than you think you need. It will wilt and be so little! It's kinda hard to overpower the dish with basil. 

I cooked with only sesame oil. Medium heat all the way through as sesame oil can burn at high heats and taste bitter. 

We are loving bigger pieces of chopped chicken. Less tiny bones in the dish! 

This was a good recipe. I would transfer to a serving claypot at the end. Cover, heat. When its hot drizzle more rice wine over the cover to give it more aroma.
