Notes:

Chicken - would probably marinate it next time, overnight. maybe source for a different recipe. too much ginger for my liking. 

Eggplant - steam in a steaming bowl to catch the juices so the dish can be a little "wetter". I steamed it directly in a bamboo steamer and my dish was almost bone dry... as you can see.
