Striped Bass Hot Pot in Saikyo Miso & Soymilk Broth

We are really loving Mrs Donabe's recipes! 2 back to back lunches from her!

It's fresh and light and not too sweet - the last point being a constant complain we have with Japanese dishes. 

Since black cod is hard to find, we took a risk trying this with striped bass, and things turned out just fine! I know she insists on pure soymilk or whatever, but TBH I used Silk (which has guar gum, etc.) and it was good too!

Again, ojiya was quite a highlight!
